Ingredients

Main Ingredients

  • 750 g chicken pieces
  • 2 large red onions chopped
  • 65 grams dried apricot organic with no sulphur dioxide (E220 or 220)
  • 50 grams dried raisins organic with no sulphur dioxide (E220 or 220)
  • 1 tin organic chickpeas

Sauce ingredients

  • 300 mils chicken stock
  • 2 tablespoons tomato paste organic
  • 2 tablespoons lemon juice
  • 2 tablespoons plain flour or 1 tablespoon green banana flour or 1 teaspoon arrowroot
  • 2 teaspoons honey organic

Spices

  • 1.5 teaspoons ground ginger
  • 1.5 teaspoons ground cumin
  • 1 tablespoon ground cinnamon
  • 1 tablespoon Chinese 5 spice
  • 1.5 teaspoons Cardamom
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon cayenne pepper

Instructions

  • Place the onions on the bottom of the slow cooker, then add chicken, apricots, raisins, and chickpeas
  • In a bowl, whisk together the chicken stock, tomato puree, lemon juice, flour, ginger, honey, cumin, cinnamon, black pepper, curry powder and cayenne

  • Pour the mixture over the chicken in the cooker

  • Set slow cooker for 4 hours on high or 8 hours on low
  • Stir all ingredients to mix well, 1 hour prior to the end
  • Serve with cauliflower rice or brown rice or couscous
