Slow cooker Moroccan apricot chicken

- 750 g chicken pieces
- 2 large red onions chopped
- 65 grams dried apricot organic with no sulphur dioxide (E220 or 220)
- 50 grams dried raisins organic with no sulphur dioxide (E220 or 220)
- 1 tin organic chickpeas
Sauce ingredients
- 300 mils chicken stock
- 2 tablespoons tomato paste organic
- 2 tablespoons lemon juice
- 2 tablespoons plain flour or 1 tablespoon green banana flour or 1 teaspoon arrowroot
- 2 teaspoons honey organic
Spices
- 1.5 teaspoons ground ginger
- 1.5 teaspoons ground cumin
- 1 tablespoon ground cinnamon
- 1 tablespoon Chinese 5 spice
- 1.5 teaspoons Cardamom
- 1/2 teaspoon curry powder
- 1/2 teaspoon cayenne pepper
Instructions
- Place the onions on the bottom of the slow cooker, then add chicken, apricots, raisins, and chickpeas
- In a bowl, whisk together the chicken stock, tomato puree, lemon juice, flour, ginger, honey, cumin, cinnamon, black pepper, curry powder and cayenne
- Pour the mixture over the chicken in the cooker
- Set slow cooker for 4 hours on high or 8 hours on low
- Stir all ingredients to mix well, 1 hour prior to the end
- Serve with cauliflower rice or brown rice or couscous
