A great nutritious soup is exceptionally low in calories but so good for you!
- 1 Large Bunch of Watercress
- 2 Large Onions chopped
- 2 cloves garlic chopped
- 1 tablespoon ghee coconut oil for vegans
- Filtered water
- Fry onion in coconut oil until transparent. Add garlic and fry for a minute.
- Add watercress and fill with filtered water until watercress is covered. Bring to the boil then simmer for 15 minutes.
- Blend with hand blender until smooth.
- Serve with coriander
