
Ingredients
- 1 cup organic brown rice (soak overnight for 8-12 hours)
- 4 fresh apricots chopped
- 2 spring onions
- 2 tablespoons organic currants or sultanas
- 3 tablespoons activated sunflower seeds
- 100grams wild caught tinned salmon
Optional dressing
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon organic soy sauce or tamari
Method
Cooked soaked and rinsed brown rice for 15 minutes with the cover on and 5 minutes with the cover off until all water has evaporated. Add currants. wait until cooled, add the rest of the ingredients
