Organic Brown Rice & Apricot Pilaf

Apricot Brown Rice Pilaf


  • 1 cup organic brown rice (soak overnight for 8-12 hours)
  • 4 fresh apricots chopped
  • 2 spring onions
  • 2 tablespoons organic currants or sultanas
  • 3 tablespoons activated sunflower seeds
  • 100grams wild caught tinned salmon

Optional dressing

  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon organic soy sauce or tamari


Cooked soaked and rinsed brown rice for 15 minutes with the cover on and 5 minutes with the cover off until all water has evaporated. Add currants. wait until cooled, add the rest of the ingredients
