Healthy Green Curry Stir Fry

Ingredients
Ingredients for Curry Sauce
- 2 long green chillies – roughly chopped
- Pinch chilli flakes
- 3 garlic cloves peeled
- 2 spring onions chopped
- ¼ cup coriander leaves and stems
- 4 Kaffir lime leaves
- 1 lemongrass stalk – white part roughly chopped
- 1 teaspoon ground coriander
- 1 teaspoon cumin seeds
- ½ teaspoon black peppercorns
- 1 teaspoon ground galangal
- 2 tablespoons sesame oil
- ¼ cup tamari
- zest of 1 lime
Ingredients for Curry
- ¾ cup of cauliflower
- 1 teaspoon sesame oil
- 3-4 tablespoons green curry paste
- 1 teaspoon coconut sugar
- 1 tablespoon tamari
- 250 gm firm tofu cubed, or organic chicken for non-vegetarian
- 1 zucchini sliced
- 1 bunch of broccolini or broccoli
- 1/2 can 400ml coconut milk
- Juice of 1 lime
Instructions
- METHOD – Green Curry Sauce
- Place all ingredients in a blender and blend with 1/3 cup water
- Blend for 2-3 minutes until smooth
- Transfer to a clean jar and cover surface with extra sesame oil
- This will keep for 1-2 weeks in the fridge.
