Roasted Sweet Potato Mash
This roasted sweet potato mash is not only delicious but also nutritious and exceptionally quick and easy to make! Enjoy either as a side dish or addition to a rainbow bowl.

Ingredients
- 4 medium Organic sweet potatoes
- 2 large Onions
- 1 tablespoon Olive oil
- 4 cloves garlic
- 1 teaspoon ground cinnamon
- 50 grams butter
Instructions
- Peel and chop sweet potatoes into large chunks
- Peel and chop the onion into quarters
- Line a baking tray with baking paper
- Place sweet potatoes, onion and garlic cloves (no need to peel) onto tray.
- Drizzle with olive oil and season with salt and pepper
- Cook for 30-40 minutes on 190°C until sweet potato is soft and easily mashable
- Add butter and let cool
- Once cool (to avoid microplastic leaching) add cinnamon and blend in blender
